I would make a rift on a sausage and pepper sandwich that I have made for parties. Slice pepper from pole to pole to make boats, soften slightly in the microwave and sprinkle with salt and pepper. In a little Olive OIl, cook and break up sausage with sriracha, diced onion, any pepper scraps, oregano, ground sage and fennel. Remove from pan and cool slightly. Toast panko in the pan. Add diced fresh mozzarella to sausage mixture. Fill pepper boats with sausage mixture, top with bread crumbs and bake until everything is warmed.
I know this isn’t very inventive but it is delicious!
Yum!! This sounds similar to N’s idea; he suggested stuffed peppers topped with the panko. I love the idea of some melting cheese in there with the sausage.

A play on a Scottish Egg: wrap hard boiled eggs in the sausage, coat in seasoned panko, and either fry or bake in the oven until crispy and serve it with a Sriracha Red Pepper Aioli.
Oh this sounds SPECTACULAR! Maybe an Asian flavor profile, with some Thai basil and a dash of fish sauce in the aioli?
