When I get to work, I sit down at a desk on which the stacks of papers have been rearranged so many times they might as well be dancing. When I get home, I sit down at a table slowly succumbing to a pile of opened and unopened mail, notes and lesson plans, and yes, more papers. I am freest when standing, and when I am standing I am either stalking the classroom (a practice that, though necessary, regrettably and inevitably produces yet MORE papers), walking my sweet dog-daughter, or leaning over the stove to smell or to stir or to taste.

Recently my parents phoned to confirm a flight time for Thanksgiving; could N. or I pick them up from the airport if they arrived at x time? My brain flew ahead, thinking of food, thinking of games, thinking of the family closeness of the winter holidays and longing, longing, for that to be now, now, right-now-thank-you-very-much. But at the same time, there are so many things I wanted to accomplish, as always, that remain undone.

Food Blog October 2014-0653All I can do is what I have. And what I have for you this week is, as promised, a pair of dishes that fit together so well I can’t, in retrospect, imagine presenting them here separately.

Food Blog October 2014-0655These dishes, a bean and cheese stuffed poblano and a take on the sort of rice you find shaped in a mound or a scoop on your enchilada plate at a certain type of Mexican restaurant, came into being for me during one of our dinners this past summer with our closest graduate school colleagues. Dinner was made by T., previously featured here as a salt expert, and she presented us a casserole dish approximately the temperature of hot magma, laden with fragrant peppers piled with beans and cheese. Beside them, she wedged a heavy dutch oven filled to the brim with “red rice,” a medley of tomato-laced long-grain rice shot through with aromatics and spice. It was one of those dinners where everyone ate without speaking.

Food Blog October 2014-0657I had to have it again, and I knew it would take some tinkering. T.’s rice was fluffy and almost dry, whereas recipes I’d tried for this style of rice produced something wet and floppy – a Mexican risotto, if we’re trying for politeness – and that wasn’t my aim. I wanted something toastier, more like a pilaf. Inspiration and guidance came, as it so often does, from Deb at Smitten Kitchen, in a simple, hearty little feast she calls “Stuck Pot Rice and Lentils.” Inspired by Middle Eastern rice dishes that praise the tahdig, a crispy layer on the bottom of the pot, this rice gets parboiled vigorously, then mixed with other ingredients and cooked slowly, with very little additional liquid, until it adheres into a massive round cake you can, with some care and bravery, flip out onto a plate in a large, crunchy-topped wheel.

The peppers, which get roasted over a gas flame until their skins split and peel away and their flesh hangs like wet velvet (you could likely also do this in the oven at high heat or under the broiler, but I haven’t tried it – if you do and it works out, leave your procedure in the comments!), get delicately split and seeded, and then gently loaded with a mixture of smashed black beans and cheddar cheese before being baked for a half hour to bring everything together. Upon emergence from the oven, as if all this weren’t enough, they are subjected to a shower of crumbled queso fresco cheese, cubes of avocado, toasted pumpkin seeds and (if you’re the sort who appreciates this sort of thing) a sprinkling of cilantro and a squeeze of lime juice.

The pepper is a gamble – some poblanos (they may be labeled pasillas in your grocery store) are moderately spicy, while others are barely hot enough to tickle the back of the throat. The beans keep even the spicier peppers from overwhelming the palate, and if you are steaming, the cool avocados and a big forkful of the starchy rice relieve the sting. If you really want to tease your taste buds, you could add some diced jalapeño to the rice along with the other vegetables. I resisted, since the poblanos we used were aggressive enough.

Food Blog October 2014-0668This is, I must admit, not a quick weeknight dinner. The peppers must be addressed in several stages, the beans are seasoned and cooked separately, and the rice collectively takes the better part of an hour to complete. But it’s worth it, especially as temperatures cool. At this point in the season, I’d rather be warmed from within by a well-seasoned pepper than I would by the relentless sun (did you hear that, Southern California?!). It’s a warmth that almost, almost, chases away the busyness.

Bean and Cheese Stuffed Poblanos
serves 6
6 large, shiny, firm-fleshed poblano peppers (they may be called “pasilla” peppers at your market)
2 cans (14 ounces each) black beans, one drained, one with liquid reserved
8 ounces cheddar cheese, as sharp as you like it
½ a red onion, diced
4 cloves garlic, finely minced
1 teaspoon cumin
(you may find you want salt for this, you may not. It will depend on your taste and how salty your black beans are. Taste first, add second)
¼ cup crumbled queso fresco
¼ cup toasted pumpkin seeds
1 whole avocado, cut into small chunks
2 tablespoons cilantro
squeeze of lime juice

  • If you have a gas stove, turn the burners on to medium-high heat and set the whole poblanos over the flame, charring them on all sides. Turn as needed until the skins are uniformly black and crackly and the flesh feels soft; for me this took 10-15 minutes. As they finish roasting, pop them into a large bowl and cover tightly with plastic wrap. Leave them to steam (this helps the skins peel off) until they are just warm to the touch (I, um, forgot about mine while I did some other chores; they were quite certainly ready half an hour later…).
  • If you don’t have a gas stove, I suggest using your broiler. Since I haven’t tried this I can’t give indication of times, but put them close to the heat, watch them carefully and turn as needed.
  • When the peppers are cool, use your fingers, a paper towel, or the edge of a knife blade to scrape and peel the skins off. A few black specks here and there is okay, but the skins are a bit bitter, so the more you remove, the better.
  • (While you wait for the peppers to cool, you can turn your attention to prepping ingredients for the rice)
  • As you relieve each pepper of its skin, carefully cut a slit through just one side of the pepper and excavate the seeds and ribs inside. You want an empty, in-tact pouch, and this takes some delicacy. The flesh is quite tender at this point. Wedge the skinless, empty peppers into a greased 9×13 inch baking dish.
  • Saute the onions and garlic with a pinch of salt and pepper in 1 tablespoon of olive oil over medium heat until they are starting to shade gold, but are not burned. For me, this took 5-10 minutes with frequent agitating.
  • When the aromatics are toasty and golden, add the beans – one can that has been drained, one complete with the liquid. Add the cumin and stir to combine. Then, use a potato masher to smash about ¾ of the beans into a thick paste. A few whole or half stragglers are okay – they break up the texture nicely. Cook over medium heat until most of the liquid has evaporated: 15-20 minutes.
  • This is a good moment to preheat your oven to 350F.
  • (While the beans cook, you can shift your focus to the rice for a bit. Just don’t forget to give the beans an occasional stir to ensure they are not cementing themselves to the bottom of the pan.)
  • When the liquid in the beans has mostly disappeared, turn off the heat and add the 8 ounces of shredded cheddar cheese. Stir to combine.
  • To assemble, load up each empty pepper pouch with about ½ cup of the bean and cheese mixture. This takes a bit of finagling – get the mixture in there, but don’t tear up the peppers too much. Use the sides of the neighboring peppers to help everyone stand up straight and hold in their own filling.
  • If you wish, you may sprinkle on the ¼ cup queso fresco at this point. I found I preferred it as a post-baking addition, but it’s also nice baked on.
  • Bake in your preheated 350F oven for 25-30 minutes.
  • (While the peppers bake, carry on with your rice – if you are setting it over a low flame as you put the peppers in the oven, both will be ready at the same time)
  • When the peppers emerge from the oven, set them aside for 5 minutes. Then, serve, sprinkling as desired with queso fresco, avocado chunks, toasted pumpkin seeds, and cilantro. At the last possible moment, squeeze a bit of lime juice over the top.
Stuck-pot red rice
Serves 6-8
1-½ cups long grain white rice
¼ cup olive oil, divided
½ a large onion, diced (the other half of the one you used for the peppers is convenient)
4 cloves garlic, finely minced
part or all of 1 jalapeno, ribs and seeds removed, finely diced (optional)
½ cup fresh or defrosted frozen corn
juice of 1 lime
14.5 ounce can diced tomatoes, drained, juice reserved
Water as needed (see procedure)
2 teaspoons cumin
1 teaspoon coriander
1 teaspoon salt
fresh cilantro to serve, if desired
queso fresco to serve, if desired
  • Bring a large pot of salted water to a rolling boil. Add the rice all at once, clamp on the lid, and cook undisturbed for 5 minutes. Drain and set rice aside in a large bowl.
  • In the same large pot, heat 2 tablespoons of the olive oil over medium heat. When it is shimmering, add the onion, garlic, corn, and jalapeno, if using. Stir in a pinch of salt, then put the lid back on and cook 10-15 minutes, or until the vegetables are browning nicely. Be sure your corn is defrosted before adding, or it will take longer to cook off the water it emits.
  • While vegetables cook, drain the canned tomatoes, reserving their juice. Add enough water to the tomato juice to reach ⅓ cup, then add an additional 2 tablespoons.
  • When the vegetables are nicely browned, add them to the rice and mix well to distribute evenly. Add the canned tomatoes, the cumin and coriander, the salt, the lime juice, and the mixture of tomato juice and water as well, stirring to combine.
  • (The mixture can sit for a bit at this point if you need to go back and pay attention to your beans and peppers)
  • In the same pot you used to boil the rice and cook the vegetables, heat the remaining 2 tablespoons olive oil over medium heat until shimmering. Quickly and carefully, add all of the rice mixture and use a spatula to smooth it down into an even layer.
  • Now, being sure to keep edges away from the burner, place a clean kitchen towel over the open top of the pot, clamp on the lid, and securely wrap the edges of the towel around the handle of the pot lid. This creates a tighter seal and prevents extra water from dripping from the lid back onto the rice.
  • Once your towel and lid are securely situated, lower the heat to medium-low or low and cook, undisturbed, for 30 minutes. After about fifteen minutes you should start to smell a lovely toasty rice-y smell. If it smells closer to burning, turn the heat down a bit but don’t remove the pot from the heat. Check Deb’s post (linked above) for more on the procedure, if you like.
  • When 30 minutes has passed, turn the heat off and let the pot sit for 5 minutes to allow the rice to firm up. Then, using pot holders or a thick towel, carefully position a large plate or round platter over the top of the pot and, over a counter, invert the pot onto the plate and set it down. The rice should plop down onto the plate or platter; if you’re lucky, it will do so in a single round wheel.
  • Scatter it with cilantro and crumbled queso fresco, if desired, and serve.
  • If you don’t want all that fuss, just scoop the rice into a bowl, scatter on the optional garnishes, and be done with it.

Project Sauce: Peppercorn Crusted Pork Tenderloin with Plum Gastrique

Today’s entry rounds out my eighth month of this sauce project. I’ve learned a number of things thus far, but the one that remains the most challenging is this: sauce is a component, not a complete product. That means you must not only execute the sauce itself, but you also have to decide what to drizzle, spoon, scoop, pour, or dab it over!

Food Blog August 2014-0442Sometimes this is quite simple. Hollandaise, for example, is such a classic that eggs benedict spring immediately to mind. A few weeks ago, my meunière sauce had a similar effect, demanding as it does a particular fish to moisten and flavor. And in fact, once I figured out what the next entry in my little project would be, I had no trouble dreaming up how I would serve it. It would be a gastrique – a French sauce that melts sugar and vinegar together into a thick, sweet-sour glaze. Mine, since it’s the height of summer and every week I can’t help but fill a bag with stone fruit at our local Farmers’ Market, would be dressed up a touch with the addition of plums. As soon as I knew this, I knew I wanted to serve it over moist lovely slices of pork tenderloin. Easy. Done.

Let’s straighten out an unfortunate item of business here, friends. N. doesn’t like pork. Oh he loves bacon. Sausage, especially breakfast sausage, is a treat. He’ll eat various smoked and cured pig-based items: prosciutto and pancetta are consumed with gusto and exotics like guanciale or chorizo are just fine. He’ll even tolerate ham, though it wouldn’t be his first choice. But pork itself, not treated with smoke or salt or brine, elicits a sneer. He would never order pork tenderloin in a restaurant. Ribs are more trouble than they’re worth. Even pulled pork had better be swimming in a pretty flavorful sauce to keep him interested. I have to get my pork chop fix when I visit my parents without him. It doesn’t seem to matter if it’s breaded and fried, grilled up, or seared and roasted. He’ll have the chicken, thanks.

Food Blog August 2014-0426This, as you can imagine, was a considerable wrench aimed at my little plan. But the idea of silky, tangy, liquid plum dribbling over a thick slice of tenderloin sounded too good. I decided he would just have to deal. So I rolled the tenderloin in a blend of crushed peppercorns, coarse salt, and thyme leaves. I seared it, I roasted it, I let it rest. I cut it in thick, moist slices and served him a few with a coating of ruby sauce.

Food Blog August 2014-0428He went back for seconds. Later, I caught him in the refrigerator tasting just one more slice. He considered piling the leftovers onto some sourdough for a lunch sandwich the next day. Um, pork.

Food Blog August 2014-0432I can only figure one of two answers here. One, it could be that the heat from the crushed peppercorns was so powerful that it disguised the porcine flavor he’s so tepid about. Two, and this is the option I choose to believe: the pairing was so perfect, and the gastrique so sublimely flavored, that he couldn’t help himself but to fall hard for the combination.

Food Blog August 2014-0434Whichever it was, and however you feel about pork, this sauce is definitely worth trying. No butter this time; this sauce contains no dairy, no eggs, and no flour. It’s completely different from every other sauce I’ve approached thus far, with one exception: it must be simmered to thicken. Here, though, rather than emulsifying butter or letting flour granules soak up liquid or gently cooking egg yolks to coax out their protein strands, we’re contending with melting sugar and evaporating water content. In my version, the sugar and vinegar required to make this a gastrique are joined by gloriously ripe red plums, cooked down into a jammy pulp (helped out with the determined application of a potato masher), strained, and then returned to the pan just to help a few bits of diced raw plum heat through, for some texture. And all of this happens while the pork is cooking, so everything is ready to go at roughly the same time.

Food Blog August 2014-0437Food Blog August 2014-0438If you’re not a pork tenderloin fan, I think this would also work really well with salmon, or with various varieties of poultry. It would also provide the perfect wilt as the dressing in a warm salad of dark leafy greens; I’d opt for spinach. And save the skins and pulp after you’ve strained out the glorious velvet sauce. Warm or cool, perhaps with an additional sprinkle of sugar, they make a fantastic tart spread for toast.

Peppercorn crusted pork tenderloin with plum gastrique
Gastrique recipe adapted from The Tomato Tart
Serves 4
 
For the pork:
1 lb. boneless pork tenderloin
1-2 tablespoons whole black peppercorns, crushed (we used 2 tablespoons, which was aggressively peppery. If you are concerned about spice, try 1 tablespoon)
1 tablespoon fresh thyme leaves
1 tablespoon coarse salt
2 tablespoons olive oil, for searing
 
For the gastrique:
4 ripe plums, divided (the riper they are, the faster they will cook down)
½ cup red wine vinegar
3 tablespoons sugar
Pinch of salt

 

  • Preheat the oven to 350F. While it warms, combine crushed peppercorns, thyme, and salt on a large plate or a sheet tray, and roll the pork through it, coating it on all sides.
  • Heat the olive oil over medium-high in a large skillet. When it is rippling but not quite smoking, add the pork and sear it until golden-brown on all sides. This should take 2-3 minutes per side. As each side sears, leave it alone. You won’t get a lovely golden crust if you shake the pan and move the pork around too much.
  • When the outside of the pork is a uniform golden-brown (though of course quite raw on the inside still), relocate it to a rack on a roasting pan (I just placed a rack over the sheet tray I’d used earlier) and roast in your 350F oven for 35-45 minutes, or until the interior tests 150F. Then remove it from the oven, wrap tightly with aluminum foil and leave it for 10 minutes. During this time the temperature will rise to 160F, which is perfect.
  • Slice and serve with warm plum gastrique. A few slices, nicely sauced, over a bed of goat cheese polenta is quite nice.

 

  • While the pork is roasting, make the plum gastrique. Pit and quarter three of the plums. Pit the fourth plum, cut it into a small dice, and set aside.
  • Add the three quartered plums, the vinegar, and the sugar to a saucepan and cook over medium heat until simmering.
  • Turn the heat down, maintaining the simmer, and cook for 5 minutes. Then, using a potato masher (or, if they are really ripe, just the back of a spoon), mash up the plums, skins and all, into a pulpy mess.
  • Cook, stirring often, until the mixture gets syrupy – about 15 minutes.
  • Pour and/or smash the mixture through a strainer to separate the pulp and skins. You can do this into a bowl, or right back into the saucepan. Either way, once the mixture is strained, pour the sauce portion back into the pan, add the diced plumps and a pinch of salt, and cook over low heat for 5 minutes just to heat everything through.
  • Serve warm.

Project Sauce: Sole Meunière

We are now, with one exception that you’ll see in a week or two, deep into the butter portion of this sauce project. It makes sense. Most of the big deal “mother” sauces are French, and the French do have a soft spot for butter. And that makes sense too. I mean, all you have to do is melt a few tablespoons of butter and you’ve already got a sauce. Think of the way it softens with the maple syrup on your pancakes, becoming something so much richer and more complex than either would have been by themselves! So let’s talk about some buttery details for a minute, and then I’ll take you to our sauce this week: meunière, a classic butter and lemon sauce specifically intended to be served with a sautéed filet of sole.

Food Blog August 2014-0418As I continue to learn about sauces, I’m seeing emulsion after emulsion. A fat bound to a liquid, often with some thickening agent that gives body to the sauce and helps the normally separate ingredients get along. Think vinaigrette: the fat is the olive oil, the liquid is the vinegar. Dropped into a glass together, they form distinct layers. But beat them vigorously, often with a dollop of mustard to help them blend, and they become a thick, rich dressing. Kitchen magic.

Food Blog August 2014-0402What I’m finding quite interesting about butter is that whole butter, the sort we buy in paper-wrapped sticks, is in fact an emulsion in itself. The butterfat, which is what solidifies when milk is churned, is the fat portion. But there is also some water in butter, and there are milk proteins too, which stabilize the emulsion. So in that one stick you have a liquid component and a fat component, hanging together in stasis.

Food Blog August 2014-0409When you brown butter, that darling of savory and sweet concoctions alike, several things happen. First, as the butter melts and bubbles furiously, you are seeing the water content boil off. If you stop at this point, skimming off any solids on the surface and reserving just the molten gold of the butterfat, you have clarified butter. But if instead you keep cooking it, the milk proteins that once acted as emulsifiers start to toast, and become deeply bronzed, and you have brown butter. You can even see those proteins roasting and browning in the photo above.

Meunière sauce capitalizes on brown butter. And with the water content of the butter boiled off, it needs a liquid to play with again, so we add the tart brightness of lemon juice. And then, for an herbal note, a scattering of parsley. That’s it. It’s so simple it feels almost like cheating. And yet it’s a classic, likely because how could a splash of butter and lemon be anything but delicious?

Food Blog August 2014-0410Unlike most other sauces, aside perhaps from hollandaise, meunière is pretty dish specific. It doesn’t really stand alone; it’s a sauce but also indicates preparation: sole meunière, or sometimes trout meunière. And though I obeyed and ladled mine over two delicate white filets, I could just as easily see this sauce, essentially a hot vinaigrette, serving as a bright gravy for mashed potatoes or roasted chicken. I would ladle it over a great tray of steamed green beans, or even stir some pasta into it and add shaved parmesan to the top (sidenote: as a kid who didn’t like marinara sauce on pasta, I would have welcomed this alternative with wide-open taste buds).

Food Blog August 2014-0405But as I said, I went traditional here. Not as traditional as sautéing or deboning the fish tableside, as some classic preparations demand, but I resisted my usual urge to add twists or additional ingredients. I wanted to see what this was about.

Okay, so I added some lemon zest to the salt and pepper I used to season the fish before dredging it in flour. But really, such a tiny alteration hardly counts, right? And when you serve the filet tenderly over some rice pilaf and drag your green beans through the last remnants of the sauce, well, words fail (no, seriously. I’ve sat here for fifteen minutes trying to think of how to tell you it was good!). Bring on the butter. She is clearly justified as the diva of the sauce world.

Sole Meunière
Adapted from Ina Garten and Anne Burrell
Serves 2
4 tablespoons butter, divided
2 filets of sole, 3-4 ounces each
Salt and pepper for sprinkling
Zest of 1 lemon
1 cup all-purpose flour
1 tablespoon lemon juice
1-2 tablespoons minced parsley

 

  • Preheat your oven to warm (200F or so) and place a sheet tray with a rack balanced over it inside. This will allow you to keep the fish warm and crisp while the sauce finishes.
  • Heat 2 tablespoons of the butter in a large skillet over medium-high heat.
  • While the butter melts, unwrap your fish and season both sides with a sprinkle of salt, pepper, and lemon zest.
  • Dredge the filets lightly in flour and then lay them flat straight into the pan, being sure they are not touching. If they sit around in their floury state, they will not get crisp.
  • Sauté for 2 minutes over medium-high, until the fish begins to look opaque. It will be about ⅔ cooked at this point. Flip each filet carefully, again, being sure they are not touching, and cook another 1-2 minutes until the bottom is golden and comes away easily from the pan. Remove each filet to the rack in the preheated oven.
  • Wipe out the pan and heat the remaining 2 tablespoons of butter, again over medium-high heat. When it is melted and bubbling furiously, add the lemon juice and stir to combine.
  • As the butter starts to brown, which should only take about a minute, season the sauce with salt, add the parsley, and remove from heat.
  • Transfer the fish to a plate or serving platter and spoon or carefully pour the sauce over the fish to serve.

Baked Tofu Spring Rolls and Peanut Sauce

As I noted last week, I’ve been out of town. In fact, I’ve been off the continent (though not out of the country). Now that we’re back on the mainland, I suppose I owe you a few reflections.

July Food Blog 2014-4009Kauai is beautiful. But if you’ve ever seen Jurassic Park, or Raiders of the Lost Ark, or even the opening sequence of M*A*S*H, you already know that. It’s a tropical island dotted with beaches and rainforests. It couldn’t be anything but beautiful. But what struck me as we wandered, sandal-and-swimsuit-clad, through the little towns and massive resort complexes, was how friendly it was. I don’t just mean ordinary smiling helpful friendliness. That much is expected too, since so much of the island’s industry is built on tourism and the service jobs it requires. I mean food friendliness. Many, many businesses proudly assert themselves as GMO-free. The Kauai Coffee plantation, which we visited one afternoon (photos to follow, I’m sure), is basically off the grid. They are entirely water powered by rainfall and river flow from one of the island’s mountains, and create enough energy to power parts of nearby towns as well, sometimes. It is one of the most sustainable businesses I’ve come across, but they don’t shove it in your face, just pronounce it matter-of-factly and leave you feeling that yes, this is the right thing.

It has become reasonably common practice in large restaurants or fine dining establishments, and even in some chains, for menus to include vegetarian, vegan, dairy-free, and gluten-free options. On Kauai, even many of the smallest, most local food stands are open and friendly to the idea. I guess maybe “food friendliness” translates to “willing accommodation.” There are menu codes indicating which foods are prepared without gluten, without dairy, and which can be quickly adjusted to include or remove allergens. And what was most friendly, to me, was that many of these adjustments did not involve an extra cost. Why should it, I thought, when sometimes this change is as simple as enshrouding perfectly grilled fish in a corn tortilla rather than flour?*

July Food Blog 2014-3998In that spirit, then (and because I promised my friend Ch I would post this recipe oh, a month ago…), today I want to bring you one of my favorite, most dependable and well-received party snacks that just happens to also be vegan and, if you make it with the right sort of soy sauce (even Kikkoman has a GF option now!), gluten-free as well. These pretty, tasty, surprisingly easy spring rolls involve shreds of bright carrot, bibb lettuce, fresh grassy mint, and rice noodles, a stick of tofu pressed, drizzled with soy sauce, and baked until meaty and firm, all lovingly wrapped in rice paper. Then, if you’re me, you whip up a quick batch of pantry-scavenged peanut sauce to dip them into, and you have something suitable for almost every meal. They aren’t totally allergen-free, because if you can’t have rice you can’t have the noodles or the wrappers these use, and if you have problems with peanuts, peanut sauce is of course out of the question. But they do manage to come close, accommodating the need to avoid animal products and that pesky gluten monster. Plus, they are fairly cheap to make, produce large quantities, and most importantly, are just plain delicious.

Last month, I had a few friends from work over who wanted to learn to make them, and we sat around the little table in my little “dining room” and spent the afternoon rolling, and, as you might imagine, eating, spring rolls. They kindly acquiesced, probably thanks to the free snacks and wine I was plying them with, to let me snap a few photos of the process, so that’s what you’re seeing here. Thanks, ladies!

July Food Blog 2014-4006* This doesn’t, of course, guarantee 100% safe dining for people with celiac or other severe gluten intolerances, since kitchen cross-contamination is always a concern. But it is nice that for those avoiding gluten, even casually, there’s a cost-free option.

Baked Tofu Spring Rolls
Makes 18-24, depending on the width of your tofu slices. Each one then gets halved, leaving you with 36-48 snackable pieces.
14 ounce block firm or extra firm tofu, sliced horizontally into three thin squares
¼ – ½ cup soy sauce or tamari (gluten-free soy sauce, but check labels carefully)
3-4 ounces dry rice noodles (sometimes called Maifun or Rice Sticks; I like Dynasty brand)
3 carrots, peeled and grated
1 head butter lettuce, leaves removed, halved, and crisp rib removed
30-40 leaves mint from one bunch
Round rice paper spring roll wrappers (I like the brand with the rose on the label)
Warm water

  • At least three hours before you want to serve your spring rolls, slice the tofu as described and press it by placing the thin squares between layers of paper towels and placing something heavy on top of them. I often use my cast iron pan for this. A baking dish weighted with cans or bottles works well too. Leave the tofu to press for at least 60 minutes to squeeze out some of the water.

  • During the last 15 minutes of pressing, preheat oven to 325F and line a baking tray with aluminum foil. Space out the tofu squares on the aluminum foil, being sure they don’t touch.

  • Dribble each square with soy sauce to coat and bake for 60 minutes. After the first 30 minutes, dribble the top of each square with more soy sauce, as the first application will have soaked in. When they are done, the edges of the squares are deep brown, solid, and feel a bit rubbery. Remove and let cool completely, then cut into ½ inch strips (roughly index-finger-width).

  • While tofu bakes and cools, prep the other ingredients – grating carrots, stemming mint leaves, separating lettuce leaves, etc. Submerge the rice noodles in hot water and let them steep for 8-10 minutes, until they feel flexible and are tender when bitten. Drain well and set aside to cool.

  • To roll, set up an assembly line – mint, then lettuce, then carrots, then tofu, then noodles. Be sure to have a plate or other vessel on which to place your finished rolls at the end of the line-up. Add warm water to a wide, shallow dish or bowl that the rice paper will fit into. You will address this step first.

  • Here we go: submerge one rice paper wrapper in the warm water and let it sit until it becomes completely pliable. I find this tends to take somewhere between 30 and 45 seconds.

  • When the rice paper is ready, remove and place on a flat surface. If you wish, you can briefly spread it on a paper towel to soak up some of the drips, but this isn’t strictly necessary.

  • Place 1-3 mint leaves around the rice paper wrapper, bottom surface facing up. This ensures the top, more attractive side of the leaf will be visible through the wrapper on the finished roll.

  • Next, place a piece of lettuce in the center of the wrapper so the longer edge of the lettuce (if there is one) faces you. Sprinkle this with grated carrots (a few teaspoons, though I always eyeball it).

  • Lay a piece of tofu in the cradle of lettuce and carrots you’ve created, positioning it with the long edge facing you (so, horizontally – see photos above for reference). Top the tofu with a small pile of noodles – no more than a few tablespoons, were we picky enough to measure them out – arranging them across the tofu.

  • Now we roll! As the wrapper faces you, fold in the left and right “edges” over the short sides of the tofu, so what you have looks like a long oval with two squared-off sides. Next, take the side of the wrapper closest to you and fold it completely over your fillings, then pull tight toward you. Roll up the wrapper, tucking each revolution tightly so the fillings are well contained. The tighter rolled, the better they will stay together.

  • Repeat until you run out of tofu slices! You will get a nice rhythm established. I find I can complete a roll in the time it takes a new rice paper wrapper to soften. Then you are all set to start the next.

  • Just before serving, halve each roll on the bias (with a diagonal cut) for attractive presentation.

  • These will keep, packaged in an air-tight container in the refrigerator, for 1-3 days. Let them come to room temperature before serving, as the rice paper is a little tough when cold.

Peanut Sauce
Makes a generous 1 cup
½ cup peanut butter
½ cup water
2-3 tablespoons soy sauce or tamari
1 tablespoon sriracha or other hot sauce
1 tablespoon grated ginger (if the fresh ginger is frozen, it grates really easily)
1 tablespoon rice vinegar or lime juice

  • In a small saucepan, combine all ingredients over medium low heat. Stir gently with a small spatula or a spoon.

  • As the ingredients melt together, at first the mixture will look watery and very grainy. Keep stirring gently, and it will smooth and thicken to an almost-pourable texture.

  • Taste for seasoning. If it is too salty, add an additional tablespoon each of peanut butter and water. If it is not spicy or salty enough, add more sriracha, soy, or ginger as needed.

  • Serve warm.

  • As it cools, the peanut sauce will separate slightly. Stir vigorously to re-combine.

Strawberry Lemonade Jam

If you’re like me, you’ve already been totally seduced by the complex sweet perfume of summer strawberries, lying there all innocent-like in their little baskets and boxes… maybe even twice. Okay three times. Seriously, that smell! I take home pints, pounds, flats. But here’s the embarrassing thing: once those little red gems have enticed me into slapping down dollars to take them home, I eat a few, nibbling around the hull, I cut up a handful and stir them through yogurt, I may even sprinkle on some sugar and dollop on some lightly sweetened whipped cream.

They flirt with me, teasing me with that gorgeous aroma, but once they are safely home and in the fridge (fruit molds FAST in my Southern California kitchen), the affair is half over already. I – how could I ever? – forget about them. And when they are weak and softening and reluctant to be sliced without collapsing, I try frantically to think of ways to use them so I won’t waste their summery tartness.

Well then, let’s jam. Strawberry lemonade jam. It’s an easy prospect. It’s a perfect non-adventure for a lazy day when pajamas are the right wardrobe choice, that novel you’ve been longing to finish finds its way into your hand, and you aren’t ready for breakfast until almost afternoon. And if that breakfast is toast with still-warm jam, well, carry on.

Food Blog Photo Friday 2014-3357Strawberries, a few flurries of sugar, a generous squeeze of lemon (freshly squeezed, please), a pinch of salt for its indescribable magic (you won’t taste it, but it will heighten the flavors of the other ingredients), and if you’re feeling sassy, a drizzle of framboise or chambord for extra depth and tingle. I’m nearly always feeling sassy. Then a long, slow simmer, almost an hour, until the fruit breaks down and the bubbles get thick and sluggish. Strawberries don’t have huge quantities of pectin, so this isn’t a tremendously thick jam, but who needs that, in the summer?

Food blog June 2014-3934There’s little else to say, because really, a perfect summer beverage in jam form doesn’t need much advertisement, but I suppose we can linger over serving suggestions for a moment. A languid spoonful oozed over toast, or pancakes, or dribbled into the holes of a waffle, is perfectly acceptable. If the day has, as they say, “gotten away from you” in its summery glory, a soft ladle over vanilla ice cream could never be a bad thing. If you’re more of the cocktail type, a drizzle of jam topped with gin and soda would cool and sweeten a sweltering afternoon.

Food blog June 2014-3944I went as far as using this for the filling in a batch of cupcakes I took to a baby shower last month. A quick slather between layers of cake would do nicely as well. But really, since I’m a bit of a purist, I think my favorite application was slathered across the slightly over-toasted surface of an unapologetically thick slice of homemade sourdough bread.

Let’s do summer. Let’s jam.

Strawberry Lemonade Jam
Makes…. well, it was a summer afternoon… and I forgot to measure… but it certainly made enough to play with for several days.
1 ½ pounds strawberries, hulled and roughly chopped
⅔ cups granulated sugar
½ cup freshly squeezed lemon juice (I needed two lemons for this. You may need more or less depending on how juicy yours are)
pinch of salt
2 teaspoons fruity liqueur such as framboise or chambord, optional.
  • Dump all ingredients into a pot. Set your stove to medium heat and stir gently to combine and begin dissolving the sugar. Continue to stir occasionally as things heat up.
  • After ten minutes, the strawberries and sugar will be foaming up bright pink bubbles. Stir and reduce the heat to medium-low. We do want to evaporate some of the liquid the strawberries are exuding, but not burn the sugar.
  • Simmer for another 30-45 minutes for a loose but still spreadable jam. It will still look quite thin when you take it off the heat, but will thicken as it cools. If you are unsure about thickness, put a tablespoon or two on a plate and stick it in the freezer for five or ten minutes to see how thick the finished product will be.
  • Because strawberries don’t have a tremendous amount of pectin, this all-fruit concoction will never be as thick as a commercial jam. If that is what you are looking for, you will have to add thickener.
  • Serve warm or cool, in or on, or even under, your favorite bread product, or see serving suggestions above.

Grilled Potato and Radish Salad

In the last three years, I have had the incredible good luck of attending a wedding each summer. Two years ago, I had the great honor of making the cake. One year ago, I sobbed as I watched two women legally and joyfully exchange vows, then start perhaps the greatest dance party I’ve ever attended. And this past weekend my eyes welled as the bride – dressed in a frock she designed herself, alternating white and lemon yellow flounces – betrayed just a tiny quiver in her perfect, crimson lips as her sister read a toast: a poem she’d written herself.

Food blog June 2014-3913The poem was about the bride and groom, but it was also about older and younger sisters: the beautiful friend/family/learning relationship they have as they grow up together. It was, there is almost no need to assert, beautiful. Of course it was. It was about the things the girls had weathered, and how the groom had woven his way into their laughter and music, through music of his own. But it was also about what the bride had taught her sister.

Food blog June 2014-3907Sisters learn funny things from each other, and it is disarming and lovely to be allowed to see what things they consider most important. How to read, how to write, how to sing. And, somehow magically, “how to cook radishes.” Until five or six years ago, I’d never given much thought to cooking radishes. To be honest, I hadn’t given much thought to radishes at all. They were just there, all weird and pinkly peppery, flying saucers scattered through the occasional salad, or sharp and pungent and paired with butter and salt.

Food blog June 2014-3910But here’s a funny thing, about radishes, about weddings, about friends and family and learning: as you get older, you get to choose things. Weddings help us construct the families we choose. But so can friendships, and so can an experience like graduate school, and so, oddly enough, can radishes.

Food blog June 2014-3911When N. and I lived in Eugene, Oregon, we decided to grow a garden. It was easy, there. It was a matter of shoving seeds into a spare bit of dirt, and watching them grow. Until the height of summer, it rained so often you barely had to worry about watering. Peas were one of our first crops, and of course we were invested in our tomatoes. But I’d still never considered radishes. Until, at S.’s house, a friend who has now become family, I was handed a french breakfast radish, pulled from her own little vegetable plot minutes before, a pink and while icicle the neighborhood deer had left quite alone. “You can just eat the whole thing,” S. told me, and I did. And the mild crunch, and the crisp, juicy spiciness, all but made me a convert then and there.

Food blog June 2014-3912After that first year of gardening, I always bought a pack of radish seeds. And they will never not make me think of S: razor wit, funny and honest and lovely and brilliant. She’s a willing and gracious hostess, she’s a fantastic cook, and she’s the mom to my own dog-daughter’s canine BFF. She, like the bride and groom this past weekend, like J & HP whose wedding cake I made, the people I can barely wait to spend fourth of July weekend with, is one of that special and cautiously assembled group: the family I chose.

Food blog June 2014-3915And as the fourth of July approaches, and those lovely people you choose to surround yourself with, to learn from, to sing with and read with and cook with, begin to turn their thoughts to potato salad, let me offer a fresh take to consider. This is not your traditional mayonnaise-laden, pickle-and-onion-and-dusted-with-paprika barbecue offering. (If you are after one of those, may I humbly suggest this one?) But I like this different approach, because it is lighter and fresher, because it does not require stove or oven heat, and because it makes me think of S. Tiny fingerling potatoes and plump lipstick red radishes get quartered, salted and peppered and oiled, and grilled until tender and silky. And then a few green onions, just to get a gentle char. Meanwhile, an assertive vinaigrette gets overburdened with herbs and whisked within an inch of its life to be drizzled over a bed of greens. I like arugula. S. would tell you to use the radish greens (but wash them a few times first – they can be really sandy). Potatoes and radishes get tumbled in, and after a quick toss the greens are barely wilted and the dressing soaks into the grilled vegetables like sponges in a bath.

I don’t know if this is how my bride friend’s sister learned to cook radishes. I suspect not. But the point is, those lovely things we learn, and choose, and become, should be shared.

Grilled Radish and Potato Salad, for Sarah.
Adapted from Cuisine at Home
Serves 2 as a main, 4-6 as a side
1 pound radishes, rinsed well, tops and tails removed
1 pound baby potatoes – the smaller the better
4 tablespoons olive oil, divided
1 bunch green onions or scallions, root ends trimmed off
¼ cup white wine vinegar or lemon juice
2 teaspoons dijon mustard
2 teaspoons finely minced dill
2 teaspoons finely chopped parsley
salt and pepper to taste
2-4 cups loosely packed arugula, or a combination of arugula and well-rinsed radish greens

 

  • If you are using a gas grill, place a grill tray on the burners and preheat the grill to medium over direct heat. If you are using a charcoal grill, light the coals. As they begin to turn gray, add the grill tray to let it heat up. If you are using an oven, preheat it to 425F with a sheet tray inside.
  • Quarter the radishes and halve or quarter the baby potatoes. You want equal, bite-size pieces – they need about the same amount of time to cook.
  • In a large bowl, toss the potatoes and radishes with 1 tablespoon of the olive oil, and salt and pepper to taste. Transfer them to the preheated grill or sheet tray in a single layer.
  • Grill until tender, 10-15 minutes, agitating as required to prevent burning. If you are using an oven this may take more like 20-25 minutes.
  • Meanwhile, make the vinaigrette: in a large bowl (I use the same bowl as before), whisk the remaining 3 tablespoons olive oil with vinegar, mustard, and herbs.
  • When radishes and potatoes are tender, transfer them to the bowl with the vinaigrette. Add the arugula (and radish greens, if using) and toss to combine.
  • Grill the green onions for 3-5 minutes, until the white bulbs are slightly softened and the greens are nicely charred. Chop and add to the salad, again tossing to combine.
  • Season the salad to taste with additional salt and pepper, if needed, and serve warm or at room temperature.
